I usually eat a very healthy and restrained breakfast during the week (oatmeal!), but on the weekend I like to indulge a little. I try to keep my indulgences as healthy as possible, and I have found this Arrowhead Mills Oat Bran Pancake Mix to be perfect.
I use this mix all the time to make high fiber, whole grain waffles and pancakes. It works well for both dairy-free and vegan items, as well as more traditional waffles and pancakes. A small serving of pancakes has 200 calories and 6 grams of fiber. I usually have a big breakfast with a double serving and top it with heated up frozen fruit. That still comes in at around 500 calories - a little less if I make it vegan and skip the egg.
